La Vaca Margarita Bar in Pilsen Closed For Remodel, Owner Says

PILSEN — La Vaca margarita bar is has temporarily closed for remodeling, but owners promise the Pilsen restaurant will be back "as soon as possible."

La Vaca co-owner Carmen Gutierrez confirmed Tuesday night that the restaurant is closed for remodeling, which includes painting and updating kitchen equipment.

"We will be open as soon as possible," she said via e-mail.

Gutierrez declined to answer questions about how long the restaurant has been closed.

Posts on La Vaca's Facebook page indicates the restaurant was closed Feb. 26 and Feb. 27 for a private event. On Feb. 28, a representative wrote that the Pilsen restaurant would be closed "tonight and the next couple of days" to allow for new equipment to be installed and for "spring cleaning."

A Pilsen resident wrote on website Everyblock that the restaurant was also closed in early March.

La Vaca (The Cow), at 1160 W. 18th St, opened in 2013 as a new concept for the old Cuernavaca, the traditional Mexican restaurant operated by Gutierrez's grandparents for more than 50 years.

When her grandparents retired, Gutierrez, her brother and two cousins took over the rebranded restaurant, which features a large outdoor patio.

Gutierrez's parents also own El Barco, a seafood restaurant in Wicker Park.
