North Pond's Greg Mosko Named Best New Pastry Chef

LINCOLN PARK — North Pond's pastry chef, Greg Mosko, was named one of America's top new pastry chefs by Food & Wine Magazine.

The distinction, which will be in the magazine's December issue, is something that Mosko has been keeping secret since February.

Mosko was one of just five pastry chefs around the country to receive the award and the only Midwestern chef in the group.

"It's extremely humbling," he said. "It's a very, very fantastic award for me personally. I'm speechless."

Mosko, 34, has been the pastry chef at North Pond, 2610 N. Cannon Drive, for more than five years.

"It's definitely a confidence builder," he said. "This award is definitely going to reconfirm what I believe in my desserts."

Mosko thanked North Pond chef and partner Bruce Sherman for a great level of independence in creating his desserts.

"Chef Sherman is very open to what I do," Mosko said. "He lets me kind of run the table with what I want to do. He does give me a fair amount of freedom.

With that freedom, Mosko said he tried to keep things balanced and stay away from overly sweet desserts.

His latest chocolate dish includes 62 percent dark chocolate mousse, sesame cookie, pomegranate gelée and fruit, Moroccan ice cream and Anglaise.

The award comes a year after Sherman earned his first Michelin star for North Pond.
