CHELSEA — A new restaurant with an acclaimed French chef will replace the short-lived Bar Truman inside the Chelsea Market.

Chef Laurent Gras, known for his now-shuttered, Michelin-starred restaurant L20 in Chicago, will take the helm at Grand Crew, documents filed with Community Board 4 show.

Gras, who currently heads a New York-based culinary consulting agency, has worked at restaurants including Le Louis XV in Monte Carlo and Peacock Alley at the Waldorf-Astoria in Midtown, his website says.

A tentative menu filed with CB4 touts pasta dishes including a potato gnocchi with mussel bouillabaisse and spicy rouille; bigoli with veal ragout and pecorino; and a watercress risotto with escargot meuniere.

“Snacks” on the lunch menu include salted cod fritters with spicy dipping sauce; fried prawn with garlic; and crispy sardines with escabeche dressing.

Among the main course options are baked codfish with olive oil, parsley and potatoes; a rabbit porchetta with herbs filling and romanesco; and a lamb shank tagine with salted lemon, apricot and pita bread.

The restaurant is slated to open in the spring, co-owner Ryan Hardy told CB4’s Business Licenses and Permits committee this week.
