Friend of Daniel Boulud to Offer $185 'Dining Experience' on Hudson St.

MEATPACKING DISTRICT — An award-winning chef is set to open a new high-end restaurant on Hudson Street next week.

Chef Günter Seeger's attempt to open his first New York City restaurant was bolstered by his friendship with top chefs like Daniel Boulud, though the local community board attempted to stymie his application for a liquor license.

But Seeger won out in the end, and now his New American eatery Günter Seeger NY is set to open in May 20, after a year and a half of renovation and preparation at his 641 Hudson St. space.

Opening a restaurant in New York has been a longtime dream of Seeger's, who views it as a city with a "vibrant food culture... where all the best chefs are."

"This is where I want to be and create a very personal space to serve food based on excellent product and impeccable execution," Seeger said in a statement announcing the imminent opening of his eponymous eatery.

The restaurant seats 34 and is designed to look like a classic West Village townhouse, accented in lavender and grey with exposed wood beans and oak wood floor. Seeger has decorated it with his own art collection and family heirlooms. Beside the kitchen is an 8-seat Friends' Table for diners who will get a close look at the inner workings of Seeger's kitchen.

Seeger plans to offer a multi-course tasting menu that will change every day, with wines paired by his wine director Sabra Lewis, also varying daily. The "dining experience," as Seeger is referring to it, will begin at $185 per person, including tip.

Gunter Seeger NY, 641 Hudson St. Open for dinner six days a week, closed on Sundays. Diners book reservations through the website Tock, which allows them to advise the restaurant of allergies, special occasions and other notes.
