Ample Hills Developing 'Brunchy' Ice Cream For Meatpacking District Outpost

MEATPACKING DISTRICT — Brooklyn-based ice cream purveyor Ample Hills is opening an outpost on Gansevoort Street — and a special neighborhood ice cream flavor is in the works.

The frozen dairy maven offers a unique flavor at each of its five other locations, and this one will be no different — though the flavor for the shop inside Bubby's High Line at 73 Gansevoort St. is "not developed yet," owner Brian Smith said.

"We're debating whether or not it should be more Meatpacking or more brunchy," said Smith.

Smith mused that there could be a way to do both — bacon would offer an overlap, he noted — but said "we've done quite a bit of bacon things, so I'm not sure."

"We're leaning toward brunchy, [something] related to Bubby's, [but we] haven't hit upon the right idea yet," Smith said.

The new location was first reported by Grub Street.

The 400-square-foot shop will be inside Bubby's but have its own entrance, Smith said, and will offer booth seating to accommodate eight to 10 people.

He hasn't worked out all the menu details yet, but is hoping to "collaborate with Bubby's." One form of collaboration could be "pie shakes," he said, pulling together the things both businesses are famous for.

"They're known for all of their awesome pies," he said of Bubby's, adding that the two businesses present a perfect "marriage."

Smith said they'll likely offer about 14 flavors, rotating out different ones regularly, as well as their normal array of sundaes and milkshakes. A pint freezer will also be available for people who want to skip the line and take some ice cream home, he said.

Smith hopes to open in early May, he said. Memorial Day will be the fifth anniversary of the very first Ample Hills shop in Prospect Heights.
