CARROLL GARDENS — A pop-up macaron bar has opened its doors in Carroll Gardens with popular and seasonal flavors of the delicate French treat.

Vendome Macaron Bar’s temporary location at 233 Smith St. between Butler and Douglass streets will stay open until March, in anticipation of the company’s first brick-and-mortar shop, which it plans to open in the spring in Brooklyn Bridge Park.

Company founders Taryn Garcia and Adriana Troli met in Paris while training to become chefs at culinary school École Grégoire-Ferrandi and started Vendome Macaron in 2010.

Garcia, who is also Vendome’s president and chef, said she was drawn to the macaron because of its popularity in Paris, its natural gluten-free base made of almond flour, and the “endless possibilities” of flavors that can be created.

“You can really almost put anything you want in the middle,” she said.

Vendome’s pop-up is offering flavors like sea salt caramel, Venezuelan dark chocolate, Italian pistachio and seasonal options like pecan pie and black truffle with roasted chestnuts.

The business, which has also sold its sweets at Saks Fifth Avenue and Smorgasburg, plans to open its first full café at 1 Brooklyn Bridge Park at 360 Furman St. next year.

Macarons can be bought individually at $2 apiece or in boxes of five or 10. The pop-up shop opens at 10 a.m. seven days a week,  It closes at 7 p.m. from Monday to Saturday and at 6 p.m. on Sunday.
