WEST VILLAGE — They're serving everything but the squeal.
Swine, a new pig-centric bar and restaurant opening at 531 Hudson St. Monday evening, features a pork-filled menu, with everything from pig's head to pork belly.
The menu by chef Phil Conlon, of Cafe Cluny fame, includes house-made charcuterie and dishes like swine chop with onions agrodolce and crispy fingerling potatoes, along with crispy pig's head terrine with sauce gribiche.
For those who aren't in the mood for pork, there are plenty of other options, including whole roasted trout with sorrel and radish and rabbit and mushroom terrine.
"We wanted to bridge the gap between a laid-back, neighborhood joint and a finer dining experience," John McNulty, Swine's co-owner, said in a statement.
The 70-seat restaurant will have two levels: an open kitchen dining space downstairs and a bar upstairs serving craft beers, wines and specialty cocktails like the Buck Up (pink peppercorn-infused Atlantico Reserva rum, grapefruit, ginger and soda) and Pig in the City (bacon-infused Old Overholt rye whiskey, Cocchi vermouth and apple bitters).
The restaurant will host a late-night crowd, staying open until 3 a.m on Monday to Saturday and midnight on Sunday.
