Giant Chefs Opening Restaurant In Chicago's Ace Hotel

WEST LOOP — The culinary team behind the always-packed Logan Square restaurant Giant will open a new restaurant in Ace Hotel this fall. 

Chefs Jason Vincent and Ben Lustbader oversee the restaurant's food program, with a focus on contemporary American cuisine, the chefs announced Thursday. The pair will tap a local chef and friend to serve as executive chef of the yet-to-be-named restaurant in the hip Fulton Market hotel. 

The restaurant will be a casual, "every occasion spot" serving a wide array of dishes. A brunch menu will be served seven days a week until 3 p.m., along with a rotating list of sandwiches available midday, and dinner service starting at 5 p.m. 

The Giant team also will helm Ace Hotel's in-room dining and events menus, and Giant beverage director Josh Perlman will work with the hotel's beverage team to curate the restaurant's cocktail, wine and beer list. The Ace is known for its food and beverage offerings in other cities, with hip locals often joining tourists at places like King's Highway in Palm Springs and Alto in New Orleans. 

The restaurant will have an open floor plan with a dining room, bar and lounge. While the hotel is slated to open Sept. 1, there's a chance the restaurant could open before then, a representative said. 

An executive chef and the restaurant's name is expected to be announced soon. 

Located at 311 N. Morgan St. across from Google's Chicago corporate headquarters, the 159-room Ace Hotel will also feature a café by Portland-based Stumptown Coffee Roasters. 

Giant, a petite 40-seat restaurant at 3209 W. Armitage Ave. in Logan Square, opened in June 2016 to rave reviews, and reservations are still hard to come by. 

Before opening Giant, Vincent served as executive chef of Nightwood in Pilsen, and Vincent and Lustbader cooked next to each other at Logan Square standout Lula Cafe.
