Appellation Honors Charlie Trotter With Chevre Panna Cotta

ANDERSONVILLE — For the third annual Charlie Trotter Days, Appellation will celebrate the beloved chef by serving Chevre Panna Cotta.

Through Aug. 21, the restaurant inside Pastoral Artisan Cheese, Bread and Wine, 5212 N. Clark St., will sell the dish, which features roasted and raw beets, blackberries and fennel, according to a news release.

Trotter became a renowned chef through his namesake restaurant, which he ran for 25 years. Throughout his tenure, he welcomed more than 800 aspiring chefs into his restaurant and also worked with high school students "to learn the art of excellence in service," according to the event's website.

He died of a stroke in November 2013.

The five-day culinary event aims to not only honor the chef's life by recreating dishes from his cookbooks, but also inspire the next generation of chefs.

The dish will cost $10 and a portion of the proceeds will go to the Trotter Project's Pillars of Excellence Mentor Program, "which seeks to inspire, train, and provide opportunities for aspiring chefs and hospitality professionals."
