Dovetail Taproom Opening Next Week, Get A Preview Saturday

 Ravenswood's newest brewery has some old-school tricks up its sleeves.

RAVENSWOOD — The permits just came through for Dovetail Brewery to open its taproom June 11, but curious craft beer fans can get a sneak peek and tasting Saturday.

Owners Hagen Dost and Bill Wesselink will host tours and pour samples from 11 a.m.-5 p.m. at their impressive 22,000-square-foot brewery, 1800 W. Belle Plaine Ave. Tours start on the hour, with the last tour at 5 p.m.

Cost is $10, which includes a specialty glass.

Dovetail's focus is on continental European-style brews and classic techniques. The brewery's signature lambic beer is still fermenting but guests will have an opportunity to taste the Dovetail's lager, hefeweizen and rauchbier, which is made with smoked barley malt.

Highlights of the tour are sure to be Dovetail's 106-year-old cast iron-and-copper holding tank and its coolship, a throwback piece of brewing equipment.
