Ipsento's New Spot By The 606 Aims To Open Memorial Day With $1 Doughnuts

BUCKTOWN — Indie coffee shop Ipsento has added mini doughnuts to its offerings and says the sweets are a sneak peek of what's to come at its second cafe, set to open on Monday next to The 606 in Bucktown.

"Small batch, hand made doughnuts, crafted with sweet potato and house milled Kamut," Ipsento posted on its Facebook page on Thursday.

Tim Taylor, Ipsento's owner, said that if everything goes as planned, the new location at 1813 N. Milwaukee Ave. will open at 7 a.m. Monday on Memorial Day.

Unlike its original location, there will be no sandwiches on the menu. Instead, Ipsento's new 30-seat outpost will serve sweets like doughnuts and parfaits made with Floriole granola in the morning and savory bites such as cheese boards and charcuterie at night.

The doughnuts, about one-third the size of a standard doughnut, will cost about $1 with tax.

Flavors are still being taste tested but chocolate glaze and an "Ipsento Latte" flavored doughnut with the same ingredients in the cafe's popular drink — honey, espresso, coconut and cayenne pepper — are planned, Taylor said.

In the evening, Ipsento will offer a bar with six cocktails and craft beers on draft behind a 10-tap bar.

More details on the drinks and menu are expected to be revealed within the next few days.

"It's not a full restaurant menu by any stretch, more like snack foods that you can take up on the trail. We are also working on a craft corn dog," Taylor said.

Taylor took over Ipsento in 2009 at 2035 N. Western Ave. from its original owners Rachael and Jeremy Smith who started their cafe in fall of 2006. Last year, Ipsento also added a not-open-to-public roasting facility at 1955 N. Western Ave., across from Margie's Candies.

In its first six years, Ipsento Coffee has grown from three employees to 14 under the direction of Taylor.

Ipsento Coffee's second location is adjacent to the unceremoniously named "Park 567," one of six ground-level access parks where folks can hop on or off the 2.7-mile long elevated Bloomingdale Trail. 

The park opened in 2013 and features limestone boulders for seating and a hill in the center.

Though there is no outdoor patio at Ipsento, the park next store is an ideal spot to take coffee or food — but not alcohol, Taylor said.
