Taco Station Quietly Opens On 53rd Street

HYDE PARK — Hyde Park Taco Station has quietly opened on 53rd Street offering a full menu of eight different types of tacos.

The restaurant in the former Ribs ‘N’ Bibs location at 5300 S. Dorchester Ave. is the first restaurant opened by Edgar Vasquez, who has helped run restaurants around the city for years, including Ja’ Grill in Hyde Park and the now-shuttered Moonshine in Wicker Park.

Taco Station’s menu during its soft opening is still thick with options, including mango pork tacos with avocado mash, feta and crème fraiche; grilled chicken tacos with cucumber, jalapeño pickle, yogurt and mint; and cumin lamb tacos with jalapeño, peppercorns, pickled cabbage and pea shoots.

Vasquez was not available to comment, but said in a prepared statement that said one of the goals of the restaurant is to ethically source the ingredients and make all the food by hand.

“The goal was to match the authenticity of food associated with the Ribs 'n Bibs location, but merely adapt the culture from which the food originates,” Vasquez said.

The restaurant is also offering a selection of four salads, including pan seared snapper with potato galette, broccolini, sweet corn, black beans, peppers, onion, garlic mayo and Cotija cheese or an herb crusted rockling fillet with house tartare, cos hearts, cucumber and radish.

Taco Station is currently open from 11 a.m. to 9 p.m., with extended hours expected in the coming weeks.
