Alinea Team's Roister Opens Friday In Fulton Market

WEST LOOP — The team behind Alinea, The Aviary and Next will officially open their new Fulton Market restaurant Friday. 

Roister, where "the restaurant is the kitchen, the kitchen is the restaurant," will open for dinner Friday at 951 W. Fulton Market next to The Aviary. Like other Alinea restaurants, tickets for Roister can be booked through Tock and are now for sale online. 

In a post Thursday on publishing site Medium, owner Nick Kokonas gives diners a sneak preview of the new space and concept, writing that Roister will be "unlike anything we have done before." 

"We wanted to build a restaurant in which the kitchen and dining room united," Kokonas writes. "Our goal from the beginning was to incorporate the dining tables in the kitchen, and the kitchen in the dining room, without defining where one space started and the other ended."

Truly an open kitchen, chefs will act as servers in the restaurant with "lively, loud, good music," which Kokonas describes as jeans/T-shirt friendly for diners.

The rustic but refined menu features an $85 multicourse menu, and a la carte reservations are available for $10 through Tock. The menu of sharable dishes includes pork butt and ribs with a dark and stormy glaze ($75); whole chicken and chamomile ($55); and an 8-ounce cut of A-5 Japanese Wagyu ($125). 

Kokonas said walk-ins are welcome, but recommends booking through the Tock website to avoid waits. 

The restaurant is open Wednesday through Sunday for the first few weeks, but is expected to offer lunch soon.
