Korean Takeout Restaurant, Cupbop + Ramen, Aiming To Open This Month

LINCOLN PARK — Fast-service Korean restaurant, Cupbop + Ramen, is aiming to open its first Chicago location on Clark Street sometime this month, according to its owner.

Cupbop + Ramen, 2439 N. Clark St., will specialize in cupbop: a cup filled with vegetables, rice and your choice of pork, beef or chicken — a popular takeout dish for young people in Korea. 

It will mark the first U.S. restaurant for owner Jay Shin, who runs three restaurants in South Korea. 

Shin said he landed on the Clark Street location because of the proximity to DePaul University.

"There's lots of young people and there's a university nearby. People can come and carry out easily. That's the point," he said.

Though Shin has yet to finalize the menu, he said both cupbop and ramen will cost between $11-$12. 

Once it opens, it will be neighbors with Aha Crepe, 2435 N. Clark St., which opened about two weeks ago, an employee said. 

The crepe spot offers a variety of sweet and savory crepes, ranging from mixed berries and chocolate to chicken teriyaki and tuna salad, as well as smoothies.
