Knife To Join Fork and Spoon: The Utensil Set Is Now Complete

NORTH CENTER — Imagine Snap and Crackle without Pop, rock and paper without scissors, red and white without blue.

For years, the area's restaurant scene has boasted a Fork and a Spoon but remained a piece of cutlery short of a complete utensil set.

Finally, someone is adding the missing Knife.

Not to be confused with Lincoln Park's Knife & Tine, Knife is actually a sibling of Fork and is coming soon to the former home of Chalkboard/Homegrown at 4343 N. Lincoln Ave.

According to a report in Eater, Knife should open in eight to 12 weeks.

Though David Byers, who bought Fork back when it was still called Square Kitchen (and then Fiddlehead), told DNAinfo Chicago there wasn't yet much to say about the new restaurant, chef Tim Cottini has been more forthcoming.

Cottini, who grew up in the area, originally tipped Knife's concept to the Chicago Reader — it's an updated take on the steakhouse/supper club.

A preview dinner set for Wednesday at Fork has already sold out, according to Byers, who said a second tasting would likely be scheduled for sometime in March.

The menu posted for Wednesday offers a hint of what diners could eventually expect from Knife: shrimp de Jonghe (a classic Chicago casserole), grilled pork loin, house dry-aged ribeye with beef fat potatoes and foie gras beerdelaise, and a homemade version of S'mores for dessert.

With the addition of Knife — and factoring in (Rolls 'n') Bowls, a (Perfect) Cup and the Chopping Block — the neighborhood is just a saucepan and spatula shy of fielding a full complement of kitchen equipment.

Fork is hosting a preview dinner of Knife on Wednesday. It's sold out.

Knife is set to open in two to three months in the former home of Chalkboard.
