Whiskey Business Opens Friday with Stuffed Burgers, 'Fry Bar': FIRST LOOK

WICKER PARK —  After two years of anticipation, Whiskey Business, an '80s- and '90s-themed companion to Cheesie's Pub & Grub, plans to open Friday and serve stuffed burgers and french fry entrees topped with BBQ pork and jambalaya, among several options.

Adjacent to Cheesie's Pub & Grub, which opened on New Years' Eve, Whiskey Business at 1367 N. Milwaukee Ave. will open at 5 p.m. Friday and 11 a.m. Saturday and Sunday, owner Chris Johnston said on Tuesday.

Johnston said he was still working on finalizing the food menu, so patrons might experience a limited menu for the first week as he and general manager Tom Ivaska continue to train the new staff of about 35 people.

The 60-seat bar's decor is dark with blue and pink-hued lights, offering seats at the bar and along the wall, with soft gray cushioned backing.

A rooftop deck seating 120 people and with composite flooring in the design of a Tetris game and three flat-screen TVs will open in the spring.

Whiskey Business will offer 24 beers on draft and several bottles and cans.

"Our highest-item whiskeys top out at $70 an ounce, such as the Glenlivet 25 and the Macallan Rare Cask, but the majority of the other items are very reasonably priced," Johnson said.

Among the 10 creatively named cocktails are "Prosecca Supernova," "Drew Berries N' More," and the restaurant's namesake cocktail, "Whiskey Business," a double old fashioned with cinnamon syrup and bitters.

Beers include Allagash Curieux, which is a Bourbon Barrel Aged Triple; JP Casper's White Stout and Victory at Sea, an Imperial Porter from Ballast Point Brewery in San Diego.
