Skokie Deli-Inspired Salami a Memory Jogger

BUCKTOWN —  Hot dogs are good standbys for grilling. But a trip to Local Foods for an all-beef sausage  sliced up cold over rye bread could impress some folks at your Labor Day event.

They might even notice similarities between the offering and an old standby from a traditional Kosher deli in Skokie.

Billed as "neither kosher nor salami," Local Foods’ new all-beef, smoked summer-style sausage pays homage to the kosher salami found at Kaufman’s, a legendary deli, bakery and caterer located in Skokie.

Butcher Rob Levitt’s childhood memories of frequent trips to the deli with his folks to purchase their weekly meats inspired the new item, according to a news release.

In order to re-create the salami from Kaufman’s into something of his own that he could offer to customers at Local Foods, Levitt said he seasoned the beef generously with garlic and black pepper.

Levitt suggests pairing the sausage with mustard and thinly shaved red onion on rye bread to create a cold sandwich, or just slice it up and put it on a charcuterie board.

The kosher inspired-salami sausage costs $12 per pound and is available at the Butcher & Larder inside Local Foods.

Located in the Bucktown/Elston Corridor just west of the Chicago River and east of Ashland Avenue, Local Foods opened in July with a motto of  “know the source.”

With 200 chefs, caterers and Chicago wholesale buyers already relying on Local Foods, a distribution center for Midwest farmers, the goal of the retail side of the market is to offer more locally-produced foods to residents on board with the farm-to-table movement.
