DryHop Brewers Expands: New Southport Brewery Will Focus on Farmhouse Beer

LAKEVIEW — DryHop Brewers announced Monday plans to open a second Lakeview brewery next summer.

Corridor Brewery & Provisions at 3446 N. Southport Ave. will have a distinctly Midwestern feel with farmhouse-style beers, owner Greg Shuff said.

"We're trying to be different from what we've already done" with DryHop, Shuff said. "While we're certainly happy to claim affiliation between the two breweries, we want them to stand on their own."

Corridor will seat 90 people and have a 10-barrel brewing system. The goal is to focus on farmhouse brews, which highlight unique yeasts.

"To generalize," Shuff said, "you might associate the flavors with Belgian-style ales. When I'm talking about farmhouse, I'm talking about influencing the flavor of beer with yeasts ... versus a focus on hops or malts."

Corridor will be the second brewery for Shuff, who opened DryHop Brewers at 3155 N. Broadway last June.

"I really like the Lakeview neighborhood," Shuff said. "There's plenty of restaurant competition but there isn't a lot of focus yet in this neighborhood on craft beer. There's an opportunity, and the Southport Corridor is a really vibrant street."
