Pizza Oven that Hits 1,000 Degrees, Makes Pie in 90 Seconds at Dinotto's

OLD TOWN — An oven that heats up to 1,000 degrees and can cook a pizza in 90 seconds will be the centerpiece of Dinotto Ristorante when it reopens in a new location in Old Town.

The current restaurant will serve its last Italian dishes during its last day in business Sunday, but is set to reopen around the corner with a focus on Neapolitan pizza this fall.

Chef/owner Dino Lubbat has plans to serve authentic Neapolitan pizza under the new name of Dinotto Pizzeria at 1551 N. Wells St.

Paul Biasco says the restaurant will be as close to authentic Italian pizza as you can get:

Lubbat is being forced to close the current Dinotto Ristorante at 215 W. North Ave. Sunday due to a failed lease negotiation, he said.

Lubbat's new restaurant will take over the former wine spot Flight 1551.

Dinotto Pizzeria will feature a brick oven that was imported from Naples, Italy. The oven was manufactured by third generation brick oven craftsmen, according to the manufacturer Marra Forni.

The oven will be front and center at the new Dinotto so guests will be able to watch the pizzas being made from a true pro.

Lubbat was recently certified as a pizzaiolo by the Association of Authentic Neapolitan Pizza.

Customers who remember original Dinotto Trattoria that opened in 1989 continue to call the current restaurant asking if they still deliver pizza, said Lubbat, so he expects those fans to be back.

He described the new restaurant as "a little bit more hip" than the current Dinotto.

The pizzeria will seat about 60 people and the kitchen will remain open until midnight each night.

"The neighborhood is changing and there's nothing late night for quick takeout, so we hope to provide something for the neighborhood," Lubbat said.

Lubbat hopes to open the new location by mid October.

The menu will also feature a number of pastas and antipasti as well as eight craft beers on tap and an extensive wine list.
