Promontory Restaurant Will Open on July 23

HYDE PARK — The long anticipated Promontory has finally set a date, July 23, for its grand opening.

“I feel just really happy, we’re really excited to be joining Hyde Park,” said Bruce Finkelman, the owner of the Empty Bottle and Thalia Hall who is heading up the venue side of the new restaurant.

The collaboration between Finkleman and Craig Golden and Jared Wentworth of Michelin-star restaurant Longman and Eagle has been two years in the making.

The team has spent two years renovating two floors of the former Borders bookstore at 5311 S. Lake Park Ave. into a restaurant and venue.

The first-floor restaurant will be centered around a hearth and a menu of veal, marrow, milk, thyme and other ingredients inspired by traditional open-flame cooking techniques.

The second-floor will be the venue portion of the Promontory with a large patio that hovers at the height of the nearby Metra tracks. Finkleman has promised an eclectic variety of bands.
